Is chowder the first all-american dish?
I love sea scallops, so I wasnt hugely disappointed that I couldnt get bay scallops. Bay scallops are sweeter than sea scallops. But, FUN FACT, female sea scallops are sweeter than their male counterparts. So, if youre wanting to get a sweeter taste component, ask for female scallops. how can you tell the difference? Theyre pinkish in color!
Add the bacon to a medium sized pot. Turn heat on to medium. This may need to be done in two batches. Cook until the bacon is crispy. Remove the bacon and place on paper towels to drain. Drain off 2 tablespoons of bacon fat into a small bowl and set aside. Reserve 2 tablespoons of bacon fat within the pot, draining any additional fat, as required. Wipe off any burnt speckles in the pot with a paper towel.
In a 4-quart flameproof casserole or large saucepan, melt the butter. Add the leek to the pot. Cook over medium-low heat for about 3 minutes, until softened. Sprinkle on the flour and cook, stirring, for 1 to 2 minutes longer, to cook without coloring.
Pour in the dissolved bouillon water and bring to a boil, stirring and scraping the bottom of the pot, until the liquid is thickened and smooth. Add the potatoes and season with the thyme and nutmeg. Partially cover and boil gently for 12 to 15 minutes, until the potatoes are just tender.
Pour in the soy milk and cream and bring to a boil, stirring until the soup thickens slightly. Add the corn and scallops, reduce the heat, and simmer for 5 minutes longer. Season with salt and pepper to taste. Serve hot.

Mussel scallop recipes
Cut the salmon into 1inch cubes. In a frying pan addtwotablespoons olive oilover medium heat. Add the salmon, in batches asneeded to avoid crowding andsauté until just opaque on the outside, about 2 minutes. Remove the salmon fromthe panand let it chill out while you continue to get your cook on.
Throw the shallots andceleryin the same panandsauté about three minutes. Add the bird stock, turn the heat to high and bring to a boil. Reduce the heat to a simmer and throw the potatoes in there. Cover partially and cook until the potatoes are tender, about 15 minutes.
Pat the scallops dry with a paper towel and salt on both sides.Add the butter to asauté pan on medium-high heat. Once the fat begins to smoke, gently add the scallops sothey are not touching each other. Cookthe scallops for 2-3minutes on each side. Alde batera utzi.
In a blender combine 1 piece of salmon, 1 cup of the corn and 1 cup of the cream. Pureeuntil smooth. Add this mixture to the chowder along with the remaining corn and cream. Simmer about five minutes. Add the salmon and scallops and simmer for 3-4minutes. Season with salt and fresh ground pepper.
