Ingredients substitutions for linzer torte
Are Linzer Tart German? Close enough but not really, the Linzer Tart origin comes from Austria. But first, what is Linzer Tart? It is an Austrian pie made from a crust partly with nuts and filled with and traditionally baked with raspberry jam. The Austrian Linzer Cake and German Linzer Cake are basically the same recipe but can also slightly differ.
Usually, it is mostly baked with raspberry jam, but plum jam or other jams can also be used, as there are different variations. Since jam is made from more than 50 sugar, I didnt use jam this Linzer Tart pie recipe, but made raspberry puree myself. With frozen fruits you can easily do this all year round. In addition, the Linzer Cake tastes less sweet and more fruity which I like much more!

Gluten-Free: Since this crumbly pastry does not rely on the formation of a gluten network, using a combination of gluten free flour with almond meal may work. And from readers of this blog who have tried similar recipes here, it appears that such a combination should work well. I haven't tried it myself, so if you do try, let me know:
I think if you were to rank foods in order of how intimidating they are to cook, at the bottom of the list would be stuff you throw together any night of the week without a recipe, the top would be basically anything Grant Achatz has ever made and then maybe, just barely a notch below would be a dish that someone you love and respect makes so perfectly that you consider it to be their recipe. It feels almost wrong to make someone elses signature dish, to meddle. Its their thing, not yours, thus theres clearly no way you could do it justice. I mean, sure theres something else you could contribute to the holiday baking curriculum, maybe one of your favorites instead?
And this has been my feeling about linzer torte for all of the years since we first met at this url in 2022. I am lucky enough to join a high school friend for Christmas Eve dinner every year, and her mom always includes squares of incredible linzer torte in her array of Holiday Baking Wonders. Her mother is an excellent cook and baker, and the one that introduced me to Maida Heatter, from whom you should buy every book, immediately, without questioning me because her recipes are detailed without being irritatingly so, charmingly written, and will never lead you astray. Truly. I mean, remember when she showed us how easy Dobos Torte could be to make? Dobos Torte. Imagine what she could do with a black truffle explosion!
But what I hadnt considered is that about halfway through the baking time, my apartment became filled with the aromatic blend of walnuts, cinnamon, cloves and lemon zest that is distinctly, wonderfully December to me. It was strange and cozy to have it in my own home instead of someone elses and the resulting tortes were everything I remember about them delicate and spiced, firm but fragile, not overly sweet and absolutely stunning. Consider this a warning: I dont think anyone only makes these once.

Linzer tortes hail from the city of Linz, Austria. There are many variations, but almost all include a very buttery base mostly comprised of ground nuts there are versions with almonds and hazelnuts, too. Read more here.
Transfer cup of almonds and the sugar to a food processor and pulse until finely ground. Add flour, baking powder, cinnamon and salt and pulse to combine.
