Easy Mini Pumpkin Pie Bites

These no-bake Pumpkin Cheesecake Balls are super easy to make, with only 5 ingredients, and the perfect can't just have one treat. Sweetened cream cheese, pumpkin puree and all those warm Fall spices make these pumpkin truffles irresistible!

Our pumpkin pie energy bites are also called pumpkin energy balls? Hmm, take a look at the photo. Doesnt that look tasty? For pumpkin lovers everywhere, energy bites are delicious. You may have heard of energy bites or energy balls, but I bet this is the first that you have heard of pumpkin energy bites!

They are easy to make, tasty and healthy too. We also like that that are small and satisfying and make a delicious snacks. They are universally loved by kids, teens, young adults, middle-aged adults and seniors.

These pumpkin pie truffles are a great way to use up literally any leftover pumpkin pie store-bought, homemade, doesnt matter here. Theyre so easy because all you do is scoop out the pumpkin pie filling and dip in chocolate or almond bark for these bite-sized balls of yumminess. You can make them up ahead of time really quickly and just place them on a table in a cute cup for your table!

These balls areno-sugar addedsince we are using dates to sweeten instead of maple syrup or other sugars.Instagramconstantly reminds me that there is a lot of confusion around added sweeteners; dates are not in the same category as maple syrup, honey or regular cane sugar.

I am always amazed by how simple no-bake balls are to make, and get mad at myself when I end up spending 6 on a small bag of them at the store. For that price, I could make this recipe over and over again- and they would taste fresher than anything store-bought.

Van loves these little balls, and I think they are the perfect kids snack for Halloween. Maybe dipped in a little dark chocolate if you wanted to make these even more decadent? I might do that for our little neighborhood Halloween party in a few weeks.

Do you need a food processor to make these energy bites

If you dont have afood processor, then Id recommend processing the dates, nuts and coconut first in a blender to form a crumbly batter, then add in the rest of the ingredients. That way they dont ball and get stuck in theblender.

From there, place the batter in a bowl, then scoop out the no-bake pumpkin balls and place them on a baking sheet. For ease, I highly recommend using a tablespoon cookie scoop,like this one. Then, stick in the fridge or freezer to firm up. For easy removal, I recommend lining the baking sheet with parchment paper before freezing.

Nutritionally speaking, these balls are packed with plant-based nutrition like fiber, protein and iron. Pumpkin puree is a great source of vitamin A. One cup of pumpkin contains245% ofthe RDI for vitamin A.

Heres the story and please dont judge I am not a fan of pumpkin pie. Okay I said it, its out there fyooo, so liberating. But you know how it goes, pumpkin pie is passed around the table, folks grab a slice and top with a dollop of Cool Whip. I may or may not take a nibble but I usually find myself thinking there has got to be a better way.

Enter Deep Fried Pumpkin Pie Bites. Oh yeahhhh you know what Im talking about. These bites are a close relative, maybe even the fraternal twin of my pumpkin fritter, and a distant cousin once removed of my apple zeppole, but with their true pumpkin pie center and crispy ginger-colored crust they are hands down their own person, I mean being, no wait, their own Bite.

How are these pumpkin bites so quick to make?

Feel free to store these in the fridge. I love to freeze them because they stay soft enough that you can grab them out of the freezer and pop them straight in your mouth without needing to wait for them to defrost!

What do these tasty bites of pumpkin pie cost?

If we buy energy bites from a cafe, we typically pay between CAD 1-1.50 each! Even if we double the size and make 10 or so bites; closer to the larger size of the offerings at a cafe, our cost is 0.30 each!

And hey. why not go all out and make it an assorted pack! Blend up our plain, coconut, or cocoa powder covered Brownie Energy Balls; take them on the road; and dig into these tasty, filling, grab go snacks!
