CHICKEN AND SHRIMP FAJITA NACHOS

Our family has done taco nights in the past, but nachos nights are just more fun. One large skillet of nachos feeds us all comfortably thanks to the filling fiber of the beans, salsa, and the extra veggies and fresh toppings like avocado. Of course, you can customize these nachos to what your family might enjoy, but shrimp Pace salsa is a match made in foodie heaven! The flavor combos were so good!

Nachos are not just for snacking! These easy to make, flavor-packed Shrimp Nachos are hearty enough for meal time. Made with fresh filling ingredients like shrimp, cilantro, salsa, beans, and more.

The key to this dish is to not overcook the shrimp. Quickly sear, then bake for just a few minutes, and the shrimp will be tender and explode with flavor. Cook them for too long, however, and the shrimp will take on a rubbery texture. Make sure to get your pan very hot so that the seasoning blackens and the shrimp sears quickly. If the shrimp dont turn completely pink in the pan, dont worry the oven will finish them off.  

I always make sure to have some cans of ROTEL Diced Tomatoes in the pantry. My favorites are the Original and the Mexican style with Lime & Cilantro. For this recipe, I used the Mexican style ROTEL, but Original would work well also.

In a large skillet over medium-high heat, melt butter. Add shrimp, garlic, and red pepper flakes. Cook, for about 2 minutes until pink. Stir in wine and lemon juice; season with salt and pepper, to taste. Add in drained ROTEL diced tomatoes and chilies.

Spread the shrimp in a single layer on the grill pan and cook over direct medium heat, with the lid closed, until firm to the touch and opaque in the center, 2 to 4 minutes, turning once.
