How to Roast a Whole Pumpkin

Sugar pie pumpkins are widely used for making terrific pies, soups, muffins, and casseroles. Small 6 fruits are also good for carving table dcor-size jack olanterns.   Two pumpkins yield about 4 cups of puree.

The Jarrahdale Pumpkins have a silvery bluish-grey color skin with deep ribbing and surprisingly they have an orange flesh. The flavor is nutty, sweet and stringless. Carve it or bake it like any other squash. This pumpkin size ranges from 612 pounds.

In other cases, like for salads, sandwiches, or using pumpkin as a pizza topping, you'll want to start with cooked pumpkin, but skip the pureing. Either way, the process is extremely simply and starts with choosing the right type of pumpkin.

The pumpkins you need are called pie pumpkinsor sugar pumpkins and eating pumpkins, depending on what region of the country you live in. There are quite a few varieties,and they don't all look alike. Some are round, some oblong, some are orange, some are beige, and some are white. You might see them marketed as Cinderella pumpkins, or Lumina pumpkins, or cheese pumpkins, or peanut pumpkins.

Now, here is where you might need to drain the pumpkin. Some pumpkins contain more liquid than others and, particularly if you've steamed your pumpkin, you may find that the pure is a bit watery. If so, transfer the pure to your strainer or cheesecloth-lined colander and let it drain for at least an hour. Some pumpkins will yield as much as two cups of water. You can accelerate the draining process by covering the pure with plastic wrap, then place a plate over it weighted down with some cans to press out the liquid.

Way back in 2022, I wrote about roasting whole pumpkins in the oven. Talk about easy just throw the pumpkin in the oven, whole, and once it's done roasting, the pumpkin slices open like butter, no more finagling with a knife, no more worry about losing a finger. But then, what to make with the pumpkin flesh?

WHOLE ROAST PUMPKIN 2 This year, the roasting process again went fine! I didn't do side-by-side comparisons, but the flesh of this year's roasted pumpkin made one delicious pumpkin pie and pretty light-orange pancakes until the last bit turned into a pumpkin smoothie. Unfortunately I didn't save enough for Pumpkin Bread Pudding which my friend Ann served at our book club last week and . yumm.

So is freshly roasted pumpkin better than canned pumpkin? Back then, there was no deciding whether canned pumpkin is better or not – just that at first I had no luck with roasted pumpkin and then later I was more than pleased.

I've quit roasting pumpkins and instead roast what's called a Kabocha Squash which is just fine since pumpkins are members of the squash family. With kabocha squash, I get wonderful flavorful flesh, one time after another. Now that I use the "roast the whole pumpkin" technique on kabocha squash, now I make Homemade Kabocha Squash "Pumpkin" Purée all the time. AND IT'S WONDERFUL, EVERY SINGLE TIME!

Today, were going to make homemade pumpkin puree using whole fresh pumpkins and nothing else! It is more rich, thick, velvety, and flavorful than the stuff youll get at the grocery store.

Yep, it sure is! Pumpkin puree is low in fat and calories, but packs a punch of nutrients including fiber, vitamins, minerals, and tons of antioxidants. In fact, a cup of pumpkin puree provides more fiber than youd get eating two slices of whole-grain bread. Ample fiber in a meal is good for digestive health and also leaves you feeling more satiated longer. Pumpkin puree is especially high in Vitamin A, along with notable levels of vitamin C, vitamin E, vitamin K, and many B vitamins. Just like its seeds, pumpkin flesh also contains a plethora of health-promoting minerals including iron, magnesium, manganese, potassium, and copper.

What type of pumpkins can i use to make homemade pumpkin puree?

Many types! We personally prefer to use organic sugar pie or baking pumpkins. You know, the smallish orange ones you find in the produce department of the grocery store close to Thanksgiving? Full of thick, sweet flesh, sugar pie pumpkins will create the best-tasting homemade pumpkin puree. You can also make homemade pumpkin puree from Jack-o-lantern or other large decorative pumpkins, though the flesh is usually more stringy, watery, and less flavorful.

Note that sugar or pie pumpkins are fairly generic names for a number of ideal cooking pumpkin varieties, including Autumn Gold, Winter Luxury, Cinnamon Girl, Baby Pam, and New England Pie to name just a few. Furthermore, the best baking pumpkins arent just round and orange! Some of the squatty, colorful, more unique-looking pumpkins are actually the best ones to make homemade pumpkin puree with including Musquee de Provence, Cinderella, Jarrahdale, Lumina, Valenciano, and Fairy Tale pumpkins. Heck, you can even substitute most pumpkin puree recipes with butternut squash.

Why roast the pumpkins instead of steam them?

There are few different ways you can soften and cook pumpkin before turning it into homemade pumpkin puree. Some recipes call for steaming pumpkin on the stovetop, while others toss it into a crock pot or Instant Pot. All those methods work! Yet we prefer to roast our pumpkins in the oven. By roasting food at 400F or higher, a magical little thing called caramelization happens.

When food is exposed to high temperatures and begins to lightly brown, an oxidative reaction occurs that transforms the vegetal, earthy, or even slightly bitter flavors into increasingly sweet, nutty, and toasted caramel notes instead! The result is a wonderfully naturally-sweetened homemade pumpkin puree.
