Garlic Parmesan Roasted Sweet Potatoes

What would Thanksgiving be without some sort of sweet potato dishWhile a lot of folks opt for the famous candied sweet potatoes or a sweet potato casserole, my husband is not a fan of either. So, these Rosemary Parmesan Sweet Potatoes are the perfect alternative!

Even my kids love these which is a big bonus! They're sweet but savory at the same time. If you love sweet potatoes like we do then be sure and make my favorite sweet potato casserole or try these roasted maple cinnamon sweet potatoes.

Parmesan Cheese - Use the cheap grated stuff. You could use fresh grated Parmesan cheese or bagged shredded Parmesan cheese but it tends to burn at the high oven temperature which can leave a bitter taste. For best results use the cheap grated stuff.

The key to perfect roasted sweet potatoes is the high oven temperature. This recipe calls for the oven to be at 400 degrees. This is what helps the exterior of the potatoes get that nice crispy char while leaving the inside soft.

Garlic : Use fresh garlic cloves that have been minced or pressed through a garlic presser. Use chopped garlic from the jar. Or use garlic paste from the tube. Whatever you use just make sure it's equivalent to 2 cloves garlic.

Im not sure, as I always serve these baked sweet potato cubes right away. I imagine you could cook the savory sweet potatoes ahead of time and reheat them just before serving, but you might lose some of the crispness that way.

Tips for making savory roasted sweet potatoes

But first lets talk about Sunday. Are you good at Sundays? I feel like in the past year Ive become really bad at Sundays. I have this constant inner brain battle on whether I should be doing work or relaxing. And then if Im relaxing, Im thinking, I should probably be doing work. Where is the brain mute button?

Roasted sweet potatoes with rosemary, almonds parmesan

After potatoes are tender, remove from the oven and toss with the almond mixture. Lower oven temperature to 325 F and continue to cook for 10-15 minutes, until the almonds are lightly browned. Remove from the oven and toss one final time.

Is there any better method of preparing potatoes or vegetables than roasting them? If youre stuck here, the answer is an emphatic no. A little olive oil, a sprinkle of salt, and a high oven temp can make even the blandest of foods into hot, crispy deliciousness. If you start with a sweet, starchy, flavorful base to begin with and toss in some extra herbs and salty Parmesan cheese, then you can elevate the dish even further, resulting in these absolutely decadent Parmesan Roasted Sweet Potatoes.

Not only easy to find and easy to prepare, but sweet potatoes are also great for you! They are packed with iron, Vitamins B C, as well as anti-oxidants. Because of their natural sugars, adding savory flavors is a great way to balance.

For my Rosemary Parmesan Sweet Potato stacks, I gave them a classic potato treatment. Thin slices of sweet potatoes sandwich together garlic, Parmesan cheese,and rosemary. A drizzle of olive oil and you are off to the races.

Now I cant speak for everyone here, but I typically plan on two stacks per person if you are serving these as a side dish. If it is an appetizer, stick with one stack per person, butit cant hurt to make more just in case.
